Sometimes I just prefer these cake doughnuts to regular yeast doughnuts, just because they are easier to make, takes less time, and equally delicious.
Makes 4
Ingredients
150 gr ap flour
1/2 tbsp baking powder
1/4 tsp salt
1 large egg
60 ml buttermilk or 120 gr plain yogurt
30 gr sugar
15 gr melted butter
1 tsp vanilla
Zest of half lemon
1 tbsp poppy seeds
For the glaze;
1/2 cup powdered sugar
1 tbsp lemon juice
Zest of half lemon
Neutral oil to fry
Instructions
1. In a large bowl combine flour, baking powder, and salt.
2. In a small bowl whisk egg, buttermilk or yogurt, sugar, melted butter, and vanilla. Pour wet ingredients into dry, and mix to combine. Add half of a lemon zest and poppy seeds, combine,
3. Generously flour a clean surface and a rolling pin, and roll the dough to 1.5 cm thick. Cut 9 cm circles. Take out the centers from dough with a 3.5 cm cookie cutter or a bottle cap.
4. Heat the oil to 180°C/350°F. Fry the doughnut holes 2-3 at a time, 1 minute on each side. Continue with ring doughnuts 1 at a time., 2 minutes on each side. Leave them to cool on a wire rack.
5. For the glaze, whisk powdered sugar, lemon juice, and zest of a half lemon. Pour over the doughnut. Enjoy!
