Makes 15 cm/6 inch cake
Ingredients
For the cake
240 gr ap flour
Pinch of salt
2 tsp baking powder
1 tsp baking soda
200 gr sugar
250 ml vegetable or canola oil
4 large eggs
2 tsp vanilla extract or paste
250 gr carrots, grated
200 gr toasted walnuts, finely chopped
For Cream Cheese Frosting
226 gr unsalted butter, room temp
450 gr cream cheese, room temp
450 gr powdered sugar
2 tsp vanilla extract or paste
Green gel food coloring
Pink gel food coloring
Instructions
1. Preheat the oven to 180°C/350°F. Prepare 2 15 cm/6 inch cake pans with parchment paper.
2. In a large mixing bowl, combine flour, salt, baking powder, and baking soda. Add sugar, oil, eggs, and vanilla, whisk to combine. Add carrots and walnuts, and combine with a spatula.
3. Divide the batter into 2 pans and bake for 30-40 minutes or until a skewer comes out clean. Set them aside to cool.
4. For the frosting, in a large bowl beat butter and cream cheese with a hand mixer for 2-3 minutes. Sift powdered sugar, and add vanilla. Beat for additional 2 minutes. Take 1/2 cup of frosting and place it into a small bowl. Add a few drops of green food coloring, and mix to fully combine. Transfer to a piping bag with. For the rest of the frosting, add a few drops of pink food coloring, and mix to fully combine.
5. To assemble the cake, place 1 of the cakes into the serving dish. Top the cake with 1/2 cup pink frosting, and spread evenly. Top with another layer of cake, and cover the whole cake with pink frosting. Cut a small opening of the piping bag with green frosting, and pipe "Happee Birthdae Harry". Enjoy!
