This is the cake that made me fell in love with baking. When I was a kid, I always asked my mom to get the box version of this cake, because it tastes amazing and it looks so mesmerizing for a kid. Now, I don’t rely on a box mix and make my own from scratch, and it is still super easy, quick, and fun to make.
Makes a 15 cm/6 inch cake
Ingredients
55 gr unsalted butter, room temp
50 gr sugar
1 large egg
45 ml milk
1 tsp vanilla extract
75 gr ap flour
20 gr cocoa powder
1/2 tsp baking powder
250 ml whipping cream, cold
20 gr powdered sugar
1/2 tsp vanilla
1/4 tsp cornstarch
35 gr chocolate, finely chopped
1-2 banana, cut lengthwise
Instructions
1. Preheat the oven to 180°C/350°F.
2. Prepare a 15cm/6inch springform pan with parchment paper.
3. In a large, beat butter and sugar with a spatula or a hand mixer for 2-3 minutes. Add egg, milk, and vanilla extract, mix to combine. Shift flour, cocoa powder, and baking powder. Whisk to combine.
4. Pour the batter into the pan and bake for 30-35 minutes or until a skewer comes out clean. Leave it completely cool.
5. In the meantime, in a large bowl, beat cream, powdered sugar, vanilla, and cornstarch to medium peaks. Add chopped chocolate and combine.
6. With a knife, draw a circle on top of the cake leaving 1cm/.3inch from sides. Take out the cake inside of the circle but be careful not to go all the way to the bottom. You should roughly have cake with 1cm/.3inch at the bottom. Set removed cake bits aside and crumble them with your hands.
7. Place cut bananas at the bottom of the cake. Top with cream and shape cream into a dome. Finally top cream with crumbled cake pieces to shape the cake into a mole. Let it set in the fridge for an hour. Enjoy!
