Sometimes you just need a Mini Funfetti Cake to yourself to celebrate that it's Wednesday and that soon it will be weekend again.
Makes 3 9 cm/3.5 inch
Ingredients
113 gr unsalted butter
3 large eggs
100 gr sugar
1 tsp vanilla extract or paste
60 ml milk
300 gr cake flour
2 tsp baking powder
Pinch of salt
50 gr sprinkles, more to decorate
For Cream Cheese Frosting
75 gr unsalted butter, room temp
180 gr cream cheese, room temp
180 gr powdered sugar
1 tsp vanilla extract or paste
Pinch of salt
Instructions
1. Preheat the oven to 180°C/350°F. Butter the bottom and sides of a 30x30 cm/12x12 inch cake pan. Place a parchment paper at the bottom of the pan.
2. For the brown butter, place the butter in a saucepan and melt over medium heat until small brown particles appear at the bottom of the pan. Set aside.
3. For the cake, in a large bowl beat eggs and sugar with a hand mixer for 3-4 minutes, until it becomes light in color. Add vanilla, milk, and brown butter, and mix to combine. Sift flour, baking powder, and salt. Mix for 30 seconds. Add sprinkles and mix with a spatula. Pour the batter into the pan and bake for 20 minutes or until a skewer comes out clean. Leave it to completely cool.
4. For the frosting, in a large bowl beat butter with a hand mixer for 2 minutes. Add cream cheese and beat for 2 minutes. Sift powdered sugar in batches, and mix to combine. Add vanilla and salt, combine. Store in the fridge.
5. To assemble; using a 9 cm/ 3.5 inch cutter, cut 9 circles. Take one of the circles and top with 3 tbsp of frosting, add another layer of cake, and top with 3 tbsp of frosting. Add the final layer and top with 3 tbsp of frosting. Continue to make 2 more cakes with the remaining cake circles and frosting. Decorate the tops with sprinkles. Leave them in the fridge to set for an hour. Enjoy!
