Don't mistake these coconutty beauties with the evil from the hell, aka the most fragile and temperamental cookies of all time, macarons. Unlike the ones with just one O, macaroons are fairly simple and foolproof. They come together so quickly and they only have 5 ingredients, plus the chocolate.
Makes 12
Ingredients
2 large egg whites
50 gr sugar
1/2 tsp vanilla extract
Pinch of salt
125 gr unsweetened shredded coconut
Optional
30 gr semi-sweet chocolate
Instructions
1. Preheat the oven to 180°C/350°F. Prepare a baking sheet with parchment paper.
2. In a large bowl, beat the egg whites until soft peak with a hand blender. Add sugar to continue to beat until stiff peak.
3. Add vanilla, salt, and coconut. Gently fold with a spatula to combine.
4. Take 20 gr of the mixture and shape it into a ball. Transfer the ball to the parchment paper. Continue with the rest of the mixture. Bake for 15 minutes. Let them completely cool on a cooling wrack.
5. Optionally, melt the chocolate and dip the bottoms of each macaroon. Let the chocolate set. Enjoy!
