I feel like cookies are one of the hardest things to bake. Not because of the technique, but it seems like everybody has a different preference in regards to the texture. And it took me a looong time to figure out the perfect recipe for my liking. I like chewy middle and crunchy outside, and I don't like my cookies to be too thin or spread too much. Who knew cookies will take this much experiment!! Anyways if you prefer your cookies like mine, here is an epic recipe with Dark Chocolate Chunks, Pistachios and Flakey Salt. Heaven on earth!!
Makes 12-14
Ingredients
113 gr unsalted butter, room temp
75 gr light brown sugar
30 gr sugar
1 large egg
1 tsp vanilla extract or paste
Pinch of salt
110 gr flour
1/2 tsp baking soda
100 gr dark chocolate chunks
40 gr pistachios
Instructions
1. In a medium-sized bowl, beat butter, brown sugar, and sugar, with a hand or stand mixer for 3 minutes. Add egg and vanilla, beat for another minute. Sift salt, flour, and baking soda. Mix to combine. Add chocolate chunks, pistachios, and fold them into the cookie dough with a spatula. Cover the bowl with cling film, and leave it to chill in the fridge for at least 30 minutes.
2.Preheat the oven to 180°C/350°F. Prepare baking sheets with parchment paper. Using an ice cream scoop, divide the dough into 12-14 cookie dough balls. Gently flatten the dough. Bake for 10-12 minutes. Leave them to cool. Enjoy!
