I recently got a camera and I was trying to figure out what to use for practicing. I decided to go with these easy mushroom cookies that take half an hour to make. They go perfectly with a cup of Joe or tea.
Makes 22-24
Ingredients
113 gr unsalted butter, room temp
60 gr powdered sugar
1 tsp vanilla extract
1 large egg
60 gr corn starch
180 gr ap flour
1 tsp baking powder
1 tsp cocoa powder
Instructions
1. Preheat the oven to 180°C/350°F. Prepare a baking sheet with parchment paper.
2. In a medium-sized bowl, beat butter and powdered sugar with a spatula for 1 minute. Add vanilla and egg, mix to combine. Shift corn starch, flour, and baking powder. Mix until a dough forms.
3. Put cocoa powder in a shallow bowl.
4. Take 1 tbsp of dough and shape it into a ball. Place onto parchment. Dip a piping nozzles base into cocoa powder and press gently into the middle of the cookies, just halfway through. Continue with the rest of the dough.
5. Bake for 15-17 minutes and let them cool. Enjoy!
