I want to come clean about something. Yesterday I might have eaten 4 of these chewy Peanut Butter Cookies with crunchy peanut pieces, but I have a reason. I am a big tennis fan, and yesterday CitiOpen (tournament here in DC) announced that Nadal will play this summer, for the first time ever!!! I was sooo excited and I couldn't keep myself from eating these cookies.
Makes 12-14
Ingredients
113 gr unsalted butter, room temp
80 gr light brown sugar
50 gr sugar
120 gr peanut butter, smooth
1 large egg
1 tsp vanilla extract or paste
Pinch of salt
180 gr flour
1 tsp baking soda
1 cup peanuts, roasted and chopped
For the top
Demerara sugar
Instructions
1. In a medium-sized bowl, beat butter, brown sugar, sugar, and peanut butter with a hand or stand mixer for 3 minutes. Add egg and vanilla, beat for another minute. Sift salt, flour, and baking soda. Mix to combine. Add peanuts and fold them into the cookie dough with a spatula. Cover the bowl with cling film, and leave it to chill in the fridge for at least 30 minutes.
2.Preheat the oven to 180°C/350°F. Prepare baking sheets with parchment paper. Using an ice cream scoop, divide the dough into 12-14 cookie dough balls. Gently flatten the dough. Top the cookie doughs with a sprinkle of demerara sugar. Bake for 10-12 minutes. Leave them to cool. Enjoy!
