Ingredients
For the cookies
113 gr unsalted butter, room temp
55 gr sugar
1 tsp vanilla extract or paste
50 gr almond flour
150 gr ap flour
Pinch of salt
For the coating
Powdered sugar
Instructions
1. In a large bowl, beat the butter, and sugar for 2 minutes with a spatula or a hand mixer. Add vanilla and mix to combine. Sift almond four, ap flour, and salt. Mix until it resembles cookie dough. Cover the dough with plastic wrap and leave it in the fridge for 30 minutes.
2. Preheat the oven to 180°C/350°F. Prepare a baking sheet with parchment paper.
3. Take 20-22 grams of dough, and gently roll between your fingers. Shape them into a crescent. Transfer it to the baking sheet. Continue with the rest of the dough. Bake for 13-14 minutes. Let them cool on a cooling rack. Dust of with powdered sugar and enjoy!
