We all know that baked donuts are not really donuts, but hey they make way less mess. So I'll take it (on days where I definitely don't want to clean a very oily stovetop). They are perfect for fall, which hopefully will be here in the next week or so here in DC, and they go great with Adele's new song, which is on constant repeat today. Have you listened to it yet?

Ingredients
For the donuts
240 ml apple cider
150 gr flour
1/2 tsp baking powder
1/2 tsp baking soda
Pinch of salt
3/4 tsp cinnamon
1/2 tsp cardamom
50 gr sugar
25 gr light brown sugar
60 ml milk
15 gr unsalted butter, melted
1/4 tsp vanilla
1/2 egg
For the topping
50 gr sugar
1/2 tsp cinnamon
Instructions
1. Preheat the oven to 180°C/350°F. Apply thin layer of oil to a donut pan.
2. In a large bowl, combine flour, baking powder, baking soda, salt, cinnamon, and cardamom. Whisk to combine.
3. In another bowl, whisk sugar, light brown sugar, melted butter, vanilla, egg, and cooled cider. Mix wet ingredients with dry until fully combines. Pour the mixture into the donut pan, to 3/4 way up. Bake for 10-11 minutes. Leave them to cool for 10 minutes.
4. In a shallow dish, combine sugar and cinnamon. Cover donuts in cinnamon sugar and leave them to cool. Enjoy!
