Happy 4th of July! And happy Sunday to the rest of the world. What are you having today? I am eagerly waiting to devour my Cherry & Almond Bars after the bbq.
Makes 9 slices
Ingredients
150 gr cherries, halved
10 gr cornstarch
20 gr sugar
150 gr flour
75 gr almond flour
100 gr sugar
1 tsp baking powder
Pinch of salt
113 gr unsalted butter, room temp and cubed
1 large egg, beaten
1 tsp vanilla
To decorate
Flaked almonds
Instructions
1. Preheat the oven to 180°C/350°F. Prepare a 15x15 cm/6x6 inch baking dish by buttering the bottom and sides.
2. In a medium-sized bowl, combine cherries, cornstarch, and sugar. Set aside.
3. In a large bowl, combine flour, almond flour, sugar, baking powder, and a pinch of salt. Add the butter cubes, combine with a spatula. Add egg, and vanilla, and mix to combine.
4. Spread the dough to the dish and top with cherry mixture.
5. Bake for 30 minutes, and let it cool. Decorate with flaked almonds. Enjoy!
