I had extra Italian Meringue from the S'mores Bars that I shared a couple of days ago. So I decided to bake them into meringue kisses. Although Italian Meringue wouldn't be my first meringue choice, sometimes you gotta do what you gotta do.

Ingredients
For Italian meringue
75 gr sugar
25 ml water
1 large egg whites, room temp
4 Gel food coloring
Instructions
1. Preheat the oven to 95°C/200°F. Prepare a baking sheet with parchment paper.
2. For the Italian meringue; put sugar and water in a small saucepan and boil on medium heat. Place egg whites in stand mixer bowl and start beating on medium when sugar/water mixture hits 110°C/230°F. Take the sugar off the heat when it hits 118°C/245°F and slowly pour by the side of the stand mixer while the mixer is still at medium speed. Beat for 10 minutes until meringue can form medium peaks.
3. Prepare piping by placing desired piping nozzle.
4. Put a drop of each gel food coloring into a plate. Open up the piping bag, and with a tin, kitchen brush paint a line of one color from tip to the top. Turn the piping bag 45°, and paint a line of another color. Continue with all 4 colors.
5. Gently fill the piping bag with meringue, and pipe desired shapes. Bake for 1,5 hours and enjoy!
