It’s November and it’s Pie Season people!! I was going to make a regular Apple Pie with Caramel and then it hit me that that is literally Tarte Tatin. So I made the upside down version and my whole house smelled like heaven for 2 days!
Makes 25 cm/10 inch Pie
Ingredients
For the rough puff pastry
225 gr flour
5 gr salt
170 gr unsalted butter, cold
1/3 cup ice water
For the filling
4 apples
100 gr sugar
30 gr unsalted butter
1 tbsp apple cider vinegar

25 cm/10 inch cast iron, or oven-safe pan
Instructions
1. For the rough puff pastry, combine flour and salt in a large bowl. Cut 113 gr of butter into 1 inch cubes, and the rest into 1/2 inch cubes. Add to the flour mixture, and cold each piece of butter with flour. Gently press the butter into smaller pieces with your fingertips. Do not make them all into small pieces, some should stay around half walnut size. Add water and form into a dough. Wrap the dough with cling film and leave it to rest in the fridge for 1 hour.
2. Roll the dough into 25x50 cm/10x20 inch rectangle. Fold one of the shorter ends till 2/3 of the dough and fold the other on top. Cover and leave to chill in the fridge for 30 minutes.
3. Roll the dough into 25x50 cm/10x20 inch rectangle. Fold both sides to the half, and pull one side all the way over, cover, and leave to chill in the fridge for 30 minutes.
4. Repeat step 2.
5. Peel and core the apples, and cut each into 3 equal pieces. Set aside.
6. For the filling, pour half of the sugar over cast-iron pan in an even layer. Cook over medium-low until sugar dissolves. Add rest of the sugar and cook until all sugar dissolves and caramel turns into pale golden color. If you are using a cast-iron pan, you can test the color of the caramel by checking with metal spoon. Carefully add butter, and apple cider vinegar, mix with a spatula to combine. Add apples and coat all with caramel, cook over medium heat for 10 minutes.
7. Meanwhile, preheat to oven to 205°C/400°F. Take the dough out of the fridge and roll into a 30 cm/12 inch circle. Remove the pan from the heat, and arrange apples so that cut sides are up. Gently cover the apples with dough, and tuck the sides under the apples.
8. Bake for 20 minutes. Lower the heat to 180°C/350°F, and bake for 20 more minutes. Leave it to cool for 5 minutes and turn upside down with a plate. Enjoy warm or cold!
