When life gives you ripe bananas, you make Banana Pancakes. Especially when it's Sunday and all you want to do is make them while listening to Banana Pancakes by Jack Johnson. Yeap, that's exactly what I did.
Makes 6
Ingredients
175 ml whole milk
30 ml white vinegar
140 gr ap flour
30 sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp kosher salt
1 large egg
1 ripe banana, mashed
28 gr unsalted butter, melted
Optional topping;
Instructions
1. Combine milk and vinegar in a bowl. Leave it aside to become sour, 5 minutes.
2. Combine flour, sugar, baking powder, baking soda, and salt in a large bowl. Add egg, banana, melted butter, and milk/vinegar mixture and whisk until lumps are not visible.
3. Heat a large skillet over medium heat. Coat with cooking spray or any vegetable oil. Pour 1/2 cup of batter, and cook until small bubbles appear, flip and cook the other side until golden brown.
4. Stack your pancakes and top with salted caramel sauce. Enjoy!
